Summer is here and we are literally itching to get our hands on pizza! We are inches away from finishing our kitchen and now we just need to buy some tables for our trial pizza evening coming up in a few weeks and with school behind us we will have more time to hone our skills….make some visits to inspirational places and people.
We have a fair bit of footage from the last few months and will be shaping it up so you can see our beautiful woodland, kitchen garden and bread oven in action. But for now here is a little look at our recent private view.

We have had a hectic time getting everything ready our funding is sorted, our event planning, an indoor kitchen space is having it’s finishing touches applied and here we are ready for our launch.
We have done our food hygiene training with local provider Carol Hatch, made spatulas out of greenwood with the every patient Mace Brightwater, shot some video and started to edit it on our donated imac courtesy of the lovely people at Scrumpymacs and got in plenty of and pizza making practice. If you want to taste our wares then please come to our launch event on June the 4th ( it’s a saturday) where you will be able to listen to music, buy pizza, have a fruity drink and generally enjoy our beautiful kitchen garden and orchard. We will be open from 3 until about 7.
See you there

Here is a list of our potential suppliers where we hope to get all our ingredients:
Stoates flour from Shaftesbury. Tinned plum tomatoes and olive oil etc..from Essential Trading in Avon. A British Mozarella from Laverstoke farm in Hampshire. All other ingredients from local organic farms or grown in the kitchen garden.
Sloeshill copse is a four acre woodland and has been neglected for many years. The woodland is mainly ash and sycamore and there is an abundance of firewood. We will use some of the timber to make utensils for pizza making. We will start a program of treeplanting to replenish the woodland.

The bread oven was built by volunteers over three days The walls are made with three layers of clay with sand and straw mixed in. In the second and third layer the thermal retaining capacity is increased by adding more straw to the mix.

The oven is fired with seasoned wood and apart from initial smoke is very low smoking and highly efficient.
It takes 2 hours to build up the heat, which is then released over several hours.
Pizza is cooked at a high temperature and bakes in less than a minute. The oven takes 5 small pizzas at a time. On our first trial we baked 40 pizza’s in 2 hours. Earth ovens reach a temperature of over 700 degrees farenheight which falls slowly so that several meals can be cooked in one firing. We have experimented with roast vegetables, cakes and breads as well as pizzas.
The Kitchen Garden: The oven is part of The Kitchen Garden Project set up in Spring 2010. The garden is designed as a teaching space. We will be able to grow herbs, harvest vegetables, involve other people in our project and supply lunches for events and for workers, learners and volunteers.
